Piping gel is a type of edible adhesive. It's stronger than edible glue. That doesn't mean it is better than edible glue. Both products have their pros and cons. You'll find more information further down in the post.

Piping gel (same as edible glue) works best if at least one of the surfaces you are trying to stick together is still soft (not dry).

It is possible to stick two dried out parts together with piping gel but you need to let it set (you might need to hold the parts together or support them for some time, until the piping gel dries out completely). And the part you are trying to attach can't be very heavy.
7) To create a stained glass effect.


Pipe an outline in royal icing with a 1.5 or 2 nozzle. Place your coloured piping gel in a piping bag with a number 2 or 3 nozzle. Fill in the outlined areas.
 

BRANDS

Some brands set quicker than others. Some are less sticky than others. It's best to dry different products. That way you will find the one you like the most.

I usually use PME Piping Gel.

HOW TO MAKE YOUR OWN PIPING GEL


This homemade piping gel is less sticky than the ones available in shops. Very thin layers can dry out completely if you leave them overnight. Thick layers remain soft even if you leave them for a few days. It's perfect to make water, stained glass effect or to give shine to certain parts.


INGREDIENTS
  • 1cup (90g) light corn syrup
  • 1cup (60g) cold water
  • 4 teaspoons (10g) corn flour* (add more if you want the piping gel to be thicker)
  • 1teaspoon of clear vanilla or almond extract
* UK corn flour = US cornstarch


DIRECTIONS

  • Mix over high heat until boiling.
  • Cool the mixture.
  • Tint as desired.
