WHEN ROLLING OUT THE PASTE

If you notice bubbles while rolling out the paste, pop them with a pin right away (before you reach the desirable thickness).
  • If you pop the bubbles after reaching the proper thickness, you will end up with dents.
  • If you pop them before reaching the proper thickness (when the paste is still quite thick), you will be able to remove the dents by rolling out the paste more. 
  • If you don't want the pin holes to be visible, pop them from the underside of the paste.

WHEN SMOOTHING THE CAKE

Sometimes after covering a cake with sugarpaste and during smoothing, you will notice bubbles (pockets of air between the cake and the paste). Pop them with a pin as soon as you see them. 
TIPS
  • Put the pin away in a safe place after each use, so that it doesn’t get mixed with edibles. 
  • I suggest using the pins with large, colour heads, so that they are more visible.
  • Some cake decorators like to use acupuncture needles, which are very thin (they don’t leave holes like pins). I personally prefer to use regular pins - they create larger holes, so it's easier to get the air out.
